The Science: Carbohydrates are measured by how quickly they break down into glucose (sugar) in your bloodstream. Complex carbs (sweet potatoes, lentils) contain fiber, which slows down digestion and creates a steady release of insulin. Simple, refined carbs (white bread, high-fructose corn syrup) hit the bloodstream instantly, causing a massive insulin spike followed by a severe crash.

The Analogy: Building a fire requires the right fuel. Complex carbs are thick oak logs, they take a while to catch, but they burn hot and steady for hours. Processed sugars and syrups are flash paper, they create a massive, impressive fireball for exactly two seconds, and then leave you freezing in the dark.
